Mond is a newly opened boutique hotel with 6 rooms, a cafe, restaurant and a cocktail bar located in Hiriketiya, Sri Lanka – a beautiful beach village known for its surf. We are looking for a second head chef to join our Swiss/Sri Lankan team for at least one season (end of April).

At Mond we know that what we eat plays a big role in who and what we are. Therefore, we eat healthy, fresh and organic food handpicked from the nearby region. In this role you will be responsible for managing daily operations of a busy kitchen. The person we are looking for should be an outgoing personality with professional qualification and a lot of work experience. Must take responsibility of managing the kitchen department and maintain a high standard of food quality, presentation and hygiene is vital requirements, in addition to menu planning.
Overall responsibility for the kitchen’s daily operations.
Liaising with the relevant companies for food orders.
Creating new dishes and menus.
Maintaining/raising the food’s profit margins.
Monitoring and controlling stock levels.
Implementation of health and safety procedures in the kitchen.
Estimating costs and ensuring all purchases come within budget.
Taking care of the kitchen’s accounts and help creating a work roster.
Must have previous experience in managing kitchen and junior staff
Should be capable of creating, managing and organising menus with a healthy, locally sourced focus
Must be a team leader, capable of managing, training and disciplining junior staff
Excellent cooking skills and understanding of produce and ingredients
Have previously held responsibility for a kitchen operation and team
Ability to work under pressure in a busy environment
Passion for working in the kitchen and food quality
Attention to detail
Excellent communication with staff of all levels
Friendly and approachable personality
Team leading and leadership skills
In depth understanding of Food Safety standards
Ability to multi-task with “hands on” approach to work
Must speak English
